The Africa House Hotel, part of African Hotels & Tours Company Limited, located in the heart Stone Town, overlooking the Indian Ocean is one of Zanzibar’s most famous attractions - Formally a royal residence before becoming the English Club. The 15 bedroom hotel combines classic colonial and Zanzibari décor. The world famous Sunset Bar is one of Zanzibar’s liveliest venues and Tradewinds Restaurant is the foremost dining venue in Stone Town.

The role: 
As Executive Chef you’ll have overall responsibility for the hotel’s kitchen operations, directly supervise kitchen personnel with responsibility for recruiting an extremely skilled and motivated team and ensure they consistently work to the highest standards and carry out discipline and performance reviews.
You will also actively drive the food sales introducing appropriate incentives in order to increase business development. 

Description: Your main responsibilities will include:
Training and management of kitchen personnel and supervise/coordinate all related culinary activities; estimate food consumption and requisition or purchase food; select and develop recipes; standardize production recipes to ensure consistent quality; establish presentation technique and quality standards; plan and price menus; ensure proper equipment operation/maintenance and  proper safety and sanitation in kitchen. The executive chef will oversee special catering events and offer culinary instruction and/or demonstrate culinary techniques.

Requirements:Special qualifications
  • The ability to manage in a diverse environment with focus on client and customer services is essential to success in this role.
Experience
  • Previous experience with food control and labor cost, demonstration cooking, menu development, and pricing and development of culinary team.

Requirements
  • Graduate level or equivalent
  • Minimum 5 years F&B culinary management experience
  • Experience of working with a budget and financial data
  • Experience of leading and motivating a team
  • Excellent communication skills to include English, written and verbal
  • Excellent level of numeracy and literacy and confident with POS systems
  • Able to use own initiative
  • Excellent planning and control skills
  • Technical skills in the areas of food hygiene, food handling and other food related health and safety requirements

We are looking for interns who want to gain experience in the publishing industry or who have an interest in history, and for sales professionals to sell advertising space on Mambo.

This unpaid internship is a great opportunity for someone wishing to combine travel to Zanzibar with gaining editorial and online work experience. Mambo is an online travel magazine for the Zanzibar archipelago launching in November 2010, and we are offering free accommodation on the island of Unguja for four to six weeks for an intern who can work part-time, five days a week, on this exciting new editorial project.

The internship is based in the village of Paje on the beautiful south-east coast of the island, just 5 minutes from stunning beaches.

The details of the internship are somewhat flexible based on the skills of the best applicant, but could include writing, photography, making podcasts, videos, uploading content and compiling directory information.

What we are looking for is someone with a good quality university degree (if you don't have this qualification but really believe you have what it would take for this internship then do still get in touch), initiative, a knack for writing, and who has ideally contributed some pieces to publications before or been involved on a student paper. We also would like someone with good English who is Internet savvy with a good understanding of social media. An understanding of Swahili language or culture would be fantastic, but not essential.
